
Ingredients
Maida flour - 250 gm
Unsalted butter - 175 gm
Sugar - 150 gm
Eggs - 3
Vanilla essence - 3 drops
Baking powder - 1.5 tsp
Dried apricots - 150 gm
Crystallised pineapple - 150 gm
Orange - 1 (grated rind and juce)
Lemon - 1 (grated rind and juce)
Salt - 1/4 tsp
Method
Sift together the maida, baking powder, salt. Grind the sugar in a mixer and add the eggs and the butter and beat till well blended. Slowly mix in the liquid mixture into dried ingredients and blend to form a smooth mixture. Add the juices, rind and the fruits and mix with a spatula so that these get mixed into the mixture well. Line a cake tin and pour the cake batter into the tin and bake in a preheated oven for 30-35 minutes at 180 degree C or until a knitting needle comes out clean when pierced in the centre. Allow to cool in the oven. Cut into slices and serve or stove.
